The European Federation of Food Science and Technology (EFFoST) held its 35th international conference in Lausanne from 1-4 November 2021. FAIRCHAIN partner ISEKI delivered the presentation Improving food system sustainability through technological, social, and organizational innovations in intermediate food value chains to introduce our project’s objectives, case studies, and expected results.

The Austrian case study was shared with the participants of the 2021 European Round Table on Sustainable Consumption and Production, which was held in Graz between 8 and 10 September 2021. During the session ‘How will we eat?’, case study leader FH JOANNEUM, represented by Hartmut Derler, gave a presentation entitled ‘Food innovation incubator as a co-creative space for the establishment of intermediate and competitive food value chains’.

During the spring and summer of 2021, our project carried out six co-creation workshops. Stakeholders of the regional value chains covered by our case studies exchanged to define the goals of the pilot experiences. A series of implementation workshops will follow in the next months.

More than 30 participants representing milk, fruit and vegetable producers, processors, distributors, consumers and other stakeholders from eastern France discussed the opportunities and difficulties in using one of the major co-products of small and medium-sized cheese factories, whey. They collectively identified the challenges to be addressed to ensure the development of new fermented drinks based on whey with zero-waste distribution.
